Grilled cold noodles is a street snack originated from Heilongjiang Province, China.

Grilled cold noodles are common local snacks in Heilongjiang. The preparation method of fried cold noodles is simple, and auxiliary materials such as eggs and sausages can be used, with sauce as the main seasoning.

Grilled cold noodles have low cost and excellent taste. In the early stage of cold noodles, ordinary cold noodles are used, and in the later stage, special cold noodles are used (thinner and softer than ordinary cold noodles on the market, and need not be dried after processing), which is soft and can be eaten directly.

According to the official WeChat Mishan Post of the Propaganda Department of Mishan Municipal Committee of Heilongjiang Province, the roasted cold noodles originated around 1996 in Mishan No.2 Middle School, and was unintentionally invented by an individual vendor named Gai Guofeng. Some people object to this, and think that the cold noodle baking originated in Mudanjiang, but some vendors in Mudanjiang say that their cold noodle baking technology originated in Mishan.

The cold noodles used in the early days were ordinary Korean cold noodles and dried noodles. At present, the dry cold noodles used for baking cold noodles are softer, thinner and easier to bake than ordinary dry cold noodles. The local roast cold noodles in Mishan are relatively simple. Put the dry cold noodles on a charcoal stove, add various seasonings and bake.

After the cold noodles spread to other places, the production method changed. The cooking tools were changed from the original charcoal stove to iron plate, and ingredients such as eggs, sausages and onions were added, which were usually named as Northeast Cold Noodles, Heilongjiang Cold Noodles or even Harbin Cold Noodles and North Korea/South Korea Cold Noodles (although the method of barbecue processing cold noodles did not originate from the Korean Peninsula or Harbin).

In Dalian, local businessmen also invented the frying method of wrapping stinky tofu with roasted cold noodles.
