2. Another way of saying it is that cold noodles originated from the Korean nationality, and spread to the northeast during the reign of Kangxi in the Qing Dynasty, and then to Xuzhou. It is made of buckwheat or wheat, with unique gluten and rich taste. After it was introduced into Xuzhou, it was combined with local dishes to form a new pasta flavor.
The above two statements may be different, but they all show that Xuzhou cold noodles are a kind of characteristic pasta with a long history, and its name comes from its manufacturing technology and taste.
