History and Culture of Hechuan Meat Slices
"Hechuan Sliced Meat" named after a place name is a local dish in Hechuan, Chongqing, which has a history of 100 years. It is said that this dish was unintentionally created by the chef of a local restaurant.

Legend has it that one day, after the restaurant closed, the chef wrapped the leftover meat slices with eggs and starch, fried them with a small amount until they were golden on both sides, and cooked them into his own meals with various accessories and seasonings. The chef didn't expect to taste this dish, but it was delicious. After that, he did the same thing. "Hechuan Meat Slice" is orange-red, sweet and sour, slightly spicy, crisp outside and tender inside, with Sichuan flavor. It has gradually become a flavor dish in Hechuan and even Sichuan-Chongqing cuisine, which has been widely circulated throughout the country and is quite influential.
