Gancai: It is a "literati dish" in Jiangxi in past dynasties. Since the Tang and Song Dynasties, the "literati cuisine" in Jiangxi has become more popular. Such as "Wenshan (Wen Tianxiang) Diced Meat", "Dongpo (Su Dongpo) Diced Meat", "Old Table Chicken Soup" (named by Zhu Yuanzhang) and "Four Stars Looking at the Moon" (named by Mao Zedong), etc., all made annotations for the "literati cuisine" in Jiangxi. Jiangxi cuisine has a long history. As early as the Han and Jin dynasties, Jiangxi's business tourism activities were relatively prosperous. The Biography of Han Shi Ji Huo Zhi once described (Nanchang) and other places: "It is not good for rice and fish to have the same soup, or water and fire, clams and fruits." Zhang Yushu, written by Lei Cizong in the Eastern Jin Dynasty, once described the economic exchanges in Jiangxi at that time as "thousands of miles by land and four sides by water", "polished rice is good at tasting four sides, and gold iron pots give money to four sides". "Rice soup fish" and "Jiashu polished rice is good in all directions" are written about the prevalence of local food culture in Jiangxi at that time. In the Ming Dynasty, Yuan Mei also recorded a famous dish in Jiangxi in his "Suiyuan Food List": "Steamed pork with flour".
