The origin of noodle soup is also unusual. It has a long history and can be traced back to Jiang Taigong. It is said that when Jiang Taigong set out from Xiqiao, he caught a giant snake in today's Zhougong Temple. He was overjoyed and rewarded the three armed forces. He cut the snake meat into small pieces and made it into minced meat noodles, which is the predecessor of Qishan minced meat noodles today, except that the snake meat has been changed into pork. After eating and drinking enough, the army marched forward and walked to help the wind. Residents in that area still maintained the style of eating noodles at that time. In Ganxian area, it evolved into sour soup noodles. The meat is gone, and so are the vegetables. Only the broth is left. Using the existing materials, the broth was boiled in a large pot, and the soup was miraculously fragrant for ten miles by adding seasoning, salt, vinegar, pepper and shredded vegetable leaves. Then the noodles are cooked, fished out and put in a bowl, and boiled on it.
The workmanship of pouring soup noodles is particularly exquisite, and there are many procedures. Soup needs broth. After a long period of slow fire, the seasoning is mixed into the soup, and the ingredients are integrated with the soup. Vinegar is better, especially grain vinegar. Whether the soup is good depends on vinegar. Pepper should be splashed with big oil, not vegetable oil, or it will be too dry. Spread the eggs into pancakes, chop them with cabbage leaves and put them in the soup. Pepper is red and eggs are yellow.
Flour with alkali is tough and hard, as fine as hair. Cook in advance, cool with water, and remove the small eggs.
When eating, pick the noodles into a bowl and add soup to eat.
