AUX, interpreted as auxiliary/additional interface, has this thing on the sound card, which means that you can connect other audio input/output devices through this interface, no matter what type (of course, interface impedance is still necessary). On the motherboard, it also means that another probe can be connected to measure the temperature, and the temperature is where the probe is placed. Generally, the CPU and system temperature on the motherboard must be there. If the software detects other temperatures, it will use AUX instead, but in fact, there may be no real probe for this temperature, or it may be to measure the temperature of the North Bridge or PWM, or the temperature inside the chassis (probably), or the temperature provided by an external probe.
