However, the iron pot can't be used directly after it is bought, and it needs to be boiled.
The big woodpots in rural areas are iron pots, which can be used for decades. It's black and bright, and it won't rust, which is why this pot is easy to use. How do we cook the newly bought wok? Do not use it directly. Ma Bao will share my cooking method, which is very practical for your reference.
How to open a wok?
Necessary items: scouring pad, steel ball, detergent, pig fat with skin (or pig fat), peanut oil or other vegetable oil.
Boiling process:
Step 1: This iron pot is very thick and weighs 8 Jin. I'm going to cook it well, comparable to a farmer's big firewood pot, and the leather is solid and durable.
Step 2: Add a little water and detergent to the cast iron pot, clean the pot with scouring pad or steel ball (because the new pot will be coated with a layer of industrial oil when leaving the factory), and then rinse it with water.
Step 3: dry the water in the new pot with a big fire. Make a fire around the new pot. The key point is: be sure to burn around first, and it is easy to burn the pot from the middle. When the pot wall slightly changes color and smokes, switch to the next direction to continue firing until the whole pot wall is fired. This process takes about 3 minutes.
Step 4: finally burn the bottom of the pot.
Step 5: Put the new pot upside down in the sink and pour cold water around it to cool down.
Step 6: Turn the new pot over and clean it with steel balls and detergent.
Step 7: Clean the new pot, re-ignite, dry the water with strong fire, then continue to heat it, and then change it to medium and small fire, and apply lard to the bottom and walls of the pot.
Step 8: If the temperature rises, it will burn your hands. Instead, you can use a fork and continue to paint in circles. This process takes about 10 minutes.
Step 9: When the time is up, pour out the lard and wash the new pot again with steel balls and detergent. See if the pot is black and shiny now, and then look at the water droplets in the pot, which are no longer sticky.
Step 10: Dry the pan and heat it again.
Step 11: moisten the pot again with a small fire: pour in peanut oil and spray it on the wall with a frying spoon. This process takes about 5 minutes.
Step 12: When the time is up, turn off the fire, pour out peanut oil (or other vegetable oil), let the pot cool naturally, and the new pot will be finished!
Ma Bao tip:
1 This cooking method is suitable for cast iron pots and cooked iron pots. Don't do this with the coating pan.
Maintenance of the pot: wash it while it is hot after use, and don't use detergent. Then put it back on the stove to dry. Turn off the fire and brush a layer of vegetable oil in the pot for maintenance.
The pot is ready, fried fish, stir-fried dishes and braised dishes are all non-sticky!
