First, Huxian rice wine and the correlation between human factors

Huxian County was the fief of Dayu's father Kun from the 2nd1century BC to the 65438+6th century BC, which was called "Guchong State", and later it was the fief of Hu, so it was named Huxian County. The Shang Dynasty was established as a country of worship, the Zhou Dynasty as a city of worship, and then as a city of worship. It was changed to "Hu" in the Qin Dynasty and "Mi County" in the Western Han Dynasty, which has continued to this day. Huxian County is one of the earliest areas in China where wine-making began. In the historical process of creating our own long-standing culture, our ancestors accumulated extremely rich wine-making experience with superhuman wisdom and brewed wines with different colors, flavors and characteristics.

The history of Huxian County is actually a "history of yellow rice wine". On the land of Huxian County, wine has played a great role in human activities since ancient times. Sacrificing to heaven, ancestor worship, going to court, going to war, triumphing, establishing diplomatic relations, banquets and other national events are important, and it is not etiquette without wine; Small to folk festivals, visiting relatives and friends, having children on birthdays, weddings and funerals, all need wine. An ancient and modern event, a historical chapter, all involve wine.

(1) At the end of primitive society, Huxian county produced liquor.

The so-called yellow rice wine is the wine brewed from grains. 6000 ~ 7000 years ago, the ancestors living in Huxian county planted rice and made pottery. Carbonized rice and primitive social pottery (belonging to Yangshao culture period) were found in Zhangbamiao and Ganhe areas of Huxian County in the 1950s and 1980s, indicating that Huxian County had an earlier farming civilization. The existence of rice and pottery laid a material foundation for the production of wine. Jiang Tong, a native of A Jin, said in the article "Wine and Wine": "The prosperity of wine originates from the emperor or the cloud of Du Kang. The food is inexhaustible, and it can't be empty. It accumulates into a taste and lasts for a long time. It is not surprising because of this. " It is clearly pointed out that the original yellow rice wine is naturally formed by inexhaustible leftovers. In other words, if there is grain, there is rice, and if there is rice, it is possible to make wine. As the birthplace of farming civilization, Huxian region should have produced wine 5000-6000 years ago. "Huainanzi" "The beauty of Qing Dynasty begins with thunder". (2) Huxian liquor had reached a high level in Xia and Shang Dynasties.

The genealogy of the ancient emperors compiled in Qin and Han Dynasties, Shiben, records: "Yidi started the wine mash and became five flavors". The Warring States Policy, edited by Liu Xiang in the Western Han Dynasty, records: "In the past, the emperor's daughter ordered the righteous emperor to make wine beautiful, enter it, drink it, and be willing to drink it. Therefore, she snubbed the righteous emperor and refused to make wine, saying: There will be people who will die for the country with wine in the future." At that time, Huxian was the fief of Yu Fu's gun before Xia Dynasty. According to legend, Yu was born here, and Dayu used to control water here. The Book of Songs is an achievement of Wei Yu. After the death of Gun, Yuzi and Hu Shi inherited this fief. Yidi mentioned in this article is a subordinate of Yu, and should be a skilled winemaker. Sometimes Hu's family is against agriculture, and it is famous for farming and mulberry. "Heaven, making four seasons, is the law of the world." It had an important impact on ancient agricultural production. As an agricultural and sideline product, wine is an important item for offering sacrifices to heaven, ancestors, and feasts. At that time, this was a national priority and was bound to be taken seriously by the ruling class. Hu's wine industry should also be in the forefront of the Xia Dynasty. As the agricultural place under Dayu's rule, the son was in charge of agriculture and the woman was in charge of brewing. Dayu is in charge of water conservancy here, and Yidi is Yu's vassal. It is reasonable for Yidi to make wine in Hu country or participate in making wine. (Huxian county has place names related to the legend of Dayu, such as Wang Yu Temple, Wang Yu Village and Sanguo Village. )

By the Shang Dynasty, making wine with clams had been widely used. "If it is a wine cellar, it is a tiller" (The Book of Life). According to the inscription of Fang Ding, Yin Guang in the last years of the Shang Dynasty, "Yi Hai, Wang Zaichong, Wang Xiangyin ..." This tripod records the scene of the Yin emperor feasting in Guo Chong (now Huxian). The inscription that can record this matter shows that the wine and food in Huxian county have been well-known and unforgettable when doing business. (3) The Western Zhou Dynasty was an important development period of Huxian liquor industry.

Huxian county is the location of Zhoudu peak scenery. "The Book of Songs, King Wen has a voice": "King Wen has ordered this martial art, not only to cut down on worship, but also to make a city rich." As the political, economic and cultural center of the country at that time, its brewing technology was the most advanced in the country. During this period, several important events that have great influence in the history of China wine happened:

Firstly, the first technical specification of brewing recorded in the history of China, namely "Book of Rites and Moon Order", was summarized. It is recorded in the book: "The rice must be neat, the tiller is timely, the water must be fragrant, the pottery must be good, and the fire must win." The key points of brewing fine wine were pointed out from six aspects: material selection, koji making, operation, water quality, utensils and temperature. This is an important summary of the brewing experience before the Zhou Dynasty, a milestone in the history of brewing in China, and marks the maturity of brewing technology and the formation of professional and technical personnel at that time. At this time, the brewing industry in Huxian area (Zhoudu) is booming, producing a variety of fine wines, and the list is endless. For example, the most famous "Five Qi" (Pan Qi, Yong Qi, Ang Qi, Qi Lifting and Kidney Qi), "Three Wine" (Stone Wine, Yesterday Wine and Sake) and "Four Drink" (Qing, Yi, Li and Nan) and so on. Up to now, Huxian people still call yellow rice wine "event wine", which should be the continuation of the name of Zhou Dynasty.

Second, the Western Zhou Dynasty established the earliest wine system in China. According to "Notes of Zhou Li Tianguan", the Zhou royal family established a "wine administration" institution here, with a staff of l20, including 340 drinkers, women and (slaves) in the wine shop and 0/70 people in the pulp mill/kloc, totaling 630 people. Of course, these winemakers are all people at the highest level in the country. In addition, the princes and nobles in the capital all owned their own winemaking workshops, together with commercial folk winemaking workshops, which became the place with the largest number and the highest level of winemakers in China at that time. After the demise of the Western Zhou Dynasty and the royal family moved eastward, these winemakers "wine girl", "pulp girl" and "Xi" inevitably drifted to the Fengshui River, leaving their wine-making skills for the royal family to the people, so the wine-making technology in Huxian County was greatly improved and developed in the Western Zhou Dynasty.

Thirdly, in the early years of the Western Zhou Dynasty, the government of the Western Zhou Dynasty promulgated the first nationwide prohibition on alcohol in China's history. During the period of Zhou Chengwang, Duke Zhou put down the rebellion of the Yin people in the east and let his mother and brother Kang Shu run the country there. Because of the prevalence of alcoholism in Yin, it directly affected the social order in Yin, so it was ordered to ban alcohol in Yin. "This command is history? Wine from Zhou Shu. In the wine cellar, Wang Wen's remarks about abstinence from alcohol were reiterated and historical lessons were summarized. It clearly pointed out that the leaders in Yin Di must be severely punished, the officials with bad drinking habits in Yin Di must receive strict education, and the local governors in Yin Di must strictly carry out the orders of the central authorities. This document played an important role in consolidating the rule of the Zhou royal family.

Fourth, the Duke of Zhou "saluted" here, and fixed the requirements of consolidating the royal rule of the Western Zhou Dynasty in the form of etiquette. In these ceremonies, there is a strong smell of wine. In the etiquette of the Western Zhou Dynasty, the most important thing is all kinds of sacrifices, large and small, which require a lot of wine. Such as the ceremony to meet the emperor, the bride price between princes, the rural drinking ceremony discussed by gentlemen and so on. There is not a chapter in Erie without the word wine. Jia's interpretation of the Book of Rites in the Tang Dynasty said: "Yi is also a ceremony, and you can know it without saying it", which hit the nail on the head. The etiquette of the Western Zhou Dynasty can be said to be "wine ceremony" and "wine vessel".

Fifth, Duke Zhou also "had a good time" here. Duke Zhou's "music" is probably an ode to the achievements of his ancestors. In these ode, we can see many wine-related chapters from "Zhou Song" in The Book of Songs. The smaller part of The Book of Songs is all wine songs sung by middle and small aristocrats. Zhu said to him, "Zheng and Yan are also happy." These wine songs are circulating in Huxian county.

(4) The construction of Shanglin Garden in Qin and Han Dynasties greatly promoted the development of Huxian wine.

The Biography of Han Dong Fangshuo said: "Emperor Wudi set out for Yichun for three years. Weizhong Bank often drinks. " Yichun view is a palace in Shanglinyuan, and Yue is brewed wine, which is called "double wine" by Huxian people.

Huxian, as the capital of Qin and Han Dynasties, not only the court, officials, businessmen, peddlers and ordinary people used wine, but also the construction of Shanglinyuan played an immeasurable role in promoting Huxian's wine-making industry.

Shanglinyuan was built in the Qin Dynasty, and was expanded in the third year of Emperor Jianyuan. Its scope is 300 miles, with eight waters such as Ba, Yi, Jing, Wei, Feng, Gao, Lao and Lian entering and leaving. It is a super-large royal garden with many functions, such as traveling, resting, living, entertainment, performing arts, cruising, hunting, communication, seeking immortality, military training and production. "dragon festival Grand Garden Hunting Victory" is vast. Sima Xiangru, Ban Gu, Zhang Heng and other gifted scholars all wrote magnificent poems for Shanglinyuan. Such as Shanglin Fu, Hunting Feather Fu, Xi Du Fu and Xijing Fu. It is conceivable that the amount of materials needed for various activities every month was so huge that the state treasury was overwhelmed in the Han and Yuan Dynasties.

At that time, Huxian county was surrounded by Shanglinyuan. Among them, geomantic omen, floods and many famous mountains and rivers are all in Huxian county, and there are buildings such as Luyang Palace, Qingyang Palace and Yichun View. According to "Water Mirror Notes Weishui", "(Waterlogged) water flows out of Nanshan Waterlogged Valley, reaching Yichun View in the north and Jinghu County in the northeast. Waterlogged water flows out from the north and joins the muddy water. (Hey) The water goes out of Yichun Guanbei, the northeast into waterlogging, and the north into Wei, that is, Shanglin's hometown. " Shang of Sima Xiangru said: "Gao Feng suffers from floods, and the rest are entrusted to snakes to manage them." "Feather Hunting Fu" says: "Fang Chi has a thousand heads, and the school rides a thousand divisions. "I don't know how much wine can be brewed every day to meet the consumption of these emperors, princes, royalty, harem inner court, dignitaries, feather forest soldiers, musicians and dancers. The huge demand has undoubtedly played a great role in promoting the development of Huxian liquor industry.

(5) The Tang Dynasty was the heyday of Huxian liquor.

In the Tang Dynasty, the national strength was strong, the economy was prosperous, the society was stable, the people were rich, the literary and artistic garden was unprecedented, the wine culture was flourishing, and the poems and books were intoxicating, which was a period of brilliant prosperity for Huxian wine industry. Thousands of years of practical experience has been sublimated, forming a complete traditional brewing theory (due to the devastating damage of Huang Chao fire to Chang 'an City, all the documents and historical materials at that time were destroyed. Now the relevant information is scattered in the records of the Song Dynasty and later). The brewing technology and operation technology in Huxian county have been basically finalized, and the equipment is basically perfect, such as wine bed for pressing wine and wine curtain for filtering wine. Local wineries are everywhere, fragrant mountains and rivers, and they are called "Huxian wine". Everyone, from aristocrats to civilians, likes this wine. Du Fu wrote in "Boating in the West of the City": "There is no boat to paddle, and a hundred pots of wine are like springs?" He also wrote in "Banquet between Huxian County and Yuan Dashaofu": "If there is no plan to return to the ship, it is difficult to avoid drinking." Cen Can wrote in "A Cup with the Ministers of Jixian County": "The idle heron scares the flute and dives beside the bottle." It can be seen that the drinking style of Huxian at that time was the way to entertain guests.

There is a stone tablet in Huxian Caotang Temple, and the inscription was written by Emperor Taizong. The Records of Huxian County (1777) written by Ding Long, the Qing emperor, has the same content as the Records of Huxian County, which was rebuilt in the 22nd year of the Republic of China: "In the 2nd year of the Great Cause of Sui Dynasty (606), Li Yuan prayed for the descendants and people for disaster relief." Li Yuan, the secretariat of Zhengzhou, is a thorn in the side of men and people. In front of this temple, he asked the Buddha for help, and his suffering was donated. Today, a stone tablet is built for men. I hope this merit can benefit the disciples and their families, and there will never be any disaster. Disciple Li Yuan will fully support them. Daye was established on the eighth day of the first month of the second year. "After the establishment of the Tang Dynasty, Li Shimin remembered the kindness of Master Rush after he ascended the throne, and took Caotang Temple as a sacrificial ceremony for Kumarajiva, and at the same time spent the summer in Taiping Palace. Tang Gaozu Tang Gaozu and Emperor Taizong Li Shimin went to Caotang Temple to worship Buddha and offer incense. They all used this banquet to invite ministers during their summer vacation in Taiping Palace, making Huxian wine famous in Beijing. Bai Juyi, a great poet, wrote in his poem "Send Yuan Ba Shu in the morning" that "the persimmon trees are green and shady, the Wang family courtyard is wide, the lake fairy wine is in the bottle, and Nanshan is on the wall". Frankly speaking, he drank "Huxian wine" in Beijing. The "royal family" in the poem is "royal family". As can be seen from the narrative in the poem, Huxian wine was very common in Beijing at that time and was used for the daily use of the government.

Bai Juyi wrote in another poem "North Village of Suzige Mountain": "I swim in Zige Peak in the morning and go to the next village at dusk. The old villagers saw Yu and opened a statue for Yu. " Zige Peak is the first peak in the south, and "Shanxia Village" is Dujiazhuang, both within the jurisdiction of Caotang Town. This shows how popular Huxian wine was at that time.

Great poets such as Emperor Taizong, Li Bai, Du Fu, Bai Juyi, Wei, Jia Dao, Wen, Su Shi, Cheng Hao, Kouhuai and Wang all wrote poems praising Huxian's landscape, human feelings, fine wine and fine wine, leaving a lot of poems.

Historical changes. After the Song Dynasty, although the capital moved to the east, the brewing tradition in Huxian County was passed down from generation to generation and lasted for a long time. According to the Records of Huxian County (1986), most of the original wineries in Huxian County were located in the backyard of the firm, with tunnels leading to the street and wine flags hanging on the doors to attract customers. The hotel sells both wine and songs. According to records, at the end of the Qing Dynasty and the beginning of the Republic of China, a restaurant could sell 20-30 Jin of Qu and 1 fermented grains (6 bushels of rice per jar) a day.

There were as many as eight wineries in the heyday of Huxian County. The wineries in the county include Linfeng Pavilion, Zuixian Pavilion, Juxian Pavilion, Yongle Pavilion, taoranju, Zhongheyuan and Yonghe Building. These names alone are enough to attract people to stop and smell the fragrance.

Before 1950s, there were not only wineries specializing in brewing and selling wine in Huxian, but also every family would make their own wine, especially in Huxian yellow rice wine producing area, and almost every family drank it all the year round. There is cold wine in summer and hot wine in winter. When you come back from work, have a bowl to relieve thirst and fatigue.

Huxian rice wine is closely related to local people's life, folk customs and folk customs. The superior geographical environment and broad human history in Huxian area have laid a unique and solid foundation for the development and inheritance of Huxian yellow rice wine, which is incomparable to other wine producing areas.

Since the reform and opening up, Huxian yellow rice wine is like old trees and new flowers, full of youth. Some people of insight set up rice wine workshops, and hotels in the county town also brewed rice wine from Huxian County for sale.
