Fushou Village is located in the southeast of Hutou Town, Anxi County, formerly known as Huxiu. According to legend, Li Erhua (No. Fuhai), Li's ancestor, came here from Hutou Nanzhuang to settle down and gave birth to a son named Shoushan. Later, in order to remember the merits of the ancestors, they took the name of father and son and refined it into Fushou Village.
Li Youren, secretary of the Party branch of Fushou Village, said that there are 8 natural villages in Fushou Village with a population of more than 3,800, and more than 300 families in the village produce Fushou rice noodles. He remembers that when he was a child, he often saw rice noodles drying neatly on the riverbed of Fushou River. The villagers imported mountain spring water from the mountains to make rice noodles. The prepared rice noodles are spread on bamboo boards and dried on the riverbed by the stream. The sun shines directly on it, and the heat emitted by the stones on the river bed below makes the rice noodles fully absorb the sun. Dry rice noodles are of good quality and are famous in southern Fujian and Southeast Asia.
