Jiangmen has many specialties: dried tangerine peel, sunflower fans, ginger and cordyceps in Xinhui, salted fish, oysters, taro with chicken feet and bean jelly in Taishan, Magang goose in Kaiping, fried garlic in Jinshan, fermented bean curd in Shuikou, really good mud chicken, red smoke in Heshan, jasmine in Chashan, ancient silver needles and swordfish flowers in Enping, and rice noodles, stones and flowers in Enping.
