Cod stew (Bacalao a la Madrile? A): It's a traditional Madrid dish, made of cod, tomatoes, onions and olive oil. It's very strong.
Guacamole: Although guacamole is not unique to Madrid, delicious guacamole can often be found in restaurants and bars in this city. It is usually served with crispy cornflakes.
Boccadi: Madrid sandwiches are famous for their different fillings, such as fried fish, ham, bacon and various cheeses. They are a common snack.
Tarta de Santiago: This is a traditional dessert, usually made of almonds, eggs and sugar, with the sign of St. James' cross on it.
Polvorones: It's a traditional Christmas cookie, but in some shops in Madrid, you can find it all year round. They are usually small and crisp, and taste like almonds and sugar.
