National coffee rookie, how much do you know about Yunnan coffee?
To the south of the colorful clouds, there is the largest coffee planting base in Yunnan, China. You may have heard of Yunnan Cafe, but you may also know how important Yunnan is in coffee cultivation in China. According to relevant data, at present, more than 95% of China's coffee production comes from Yunnan, which is also a big exporter of coffee beans in China.

So, what I want to say is that the moon is not only round abroad, but also there are better coffee beans in our country, waiting for everyone to understand.

The climate in Yunnan is like spring all the year round, and there are also different altitudes. /kloc-since 0/892, French missionaries have brought coffee seeds to Dali, Yunnan, which started the coffee planting in Yunnan. Due to various reasons such as external publicity and economic development, Chinese people have limited understanding of Yunnan coffee, and their popularity is far less than that of foreign coffee. But in recent years, more coffee merchants choose Yunnan coffee and sell it to the whole country and the whole world, so that more people can know about Yunnan coffee.

At present, there are four major producing areas in Yunnan, namely Lincang, Baoshan, Dehong and Pu 'er. Coffee is mostly planted at the altitude of 1 100 meters, so it has moderate acidity, rich and mellow flavor, strong but not bitter, fragrant but not strong, and is famous for its unique slightly sour flavor. In Yunnan, there are three ways to treat coffee beans: washing, drying and honey treatment. Coffee beans produced in different ways have different flavors, which also forms the diversity of coffee bean flavors in Yunnan.

The coffee beans in Pu 'er producing area have larger particles and prominent sour taste.

Coffee beans from Lincang producing area are full in taste, high in saturation and balanced in fruit acidity.

The coffee beans in Dehong producing area have unique flavor and excellent quality, which is recognized as the most suitable producing area for growing small coffee.

Coffee beans in Baoshan producing area are weak in acidity, rich in aroma and bitter in taste.

In addition to producing areas, there are three main varieties of coffee beans in Yunnan, namely Tiepika, Bourbon and Katimo.

TYPICA: Tiepica coffee is a classic arabica coffee bean, which is native to Ethiopia and southeastern Sudan. Most fine coffees, including Blue Mountain coffee beans, are Tiepica.

Bourbon: Bourbon is a variety of Tiepika, which originated from Bourbon Island in the Indian Ocean. Bourbon is a kind of Chang Shengjun, which is measured by American top coffee cups, and has a high flavor of fruit acid.

Katimo: Katimo is a hybrid of Timorese species (belonging to Robusta species) and caturra species (a variety of Bobang species), so Katimo is 25% Robusta descent, and Robusta descent also determines its taste defects: the aroma is not strong enough, the overall taste is bitter, and it is easy to have astringent taste and pungent musty.

At the end of the paper, I got a general understanding of the beans and origin of Yunnan small coffee by looking at the leopard in the tube. In fact, Yunnan coffee is really good now, and there are countless boutique cafes in the streets and alleys of Yunnan. The charm of Yunnan coffee makes these baristas willing to come and take root in Yunnan. In Yunnan, you can also taste world-class hand-brewed coffee.
