In order to find delicious ingredients, Mr. and Mrs. Malone tried various butcher shops in Beijing for inspiration during the first half of the opening. Every time he tries to make ingredients at home, Malone will take notes on ingredients, and the suggestions of friends and relatives "consultants" are his reference for adjustment.
With little savings, in order to save money, Malone, with the help of his friends, pulled bricks and sand from the outer suburbs, built his own operation room and painted the storefront. A few days later, he brought more than 20 customers to Malone, and the small restaurant soon became a "wedding". After two years of opening, late customers lined up for dinner. The scenery outside the store is pleasant. Malone will set a table outside the store, but it is still difficult to satisfy the diners. He often stands and tries early.
Malone plans to move and finally settle in the south gate of the Temple of Heaven. "It's too big." Malone was impressed by the new address. At present, in addition to transforming the old riverside store, Malone has also added three branches: Ritan, Dahongmen and Houhai. Each store maintains the same core dishes, adopts differentiated management, and does not show the characteristics of each store: Tiantan Head Office has the most varieties of jiaozi; Ritan's biscuits are the most crisp and fragrant; Dahongmen presents the warmest wild vegetables in the season; Siheyuan Houhai Store has the strongest elements of old Beijing, and its cleaning facilities are world-class.
Malone actively promotes the integration of Nanmen Hot Pot into international operation. In 2006, through the double-system certification of quality management system and food safety management system, Nanmen Shuan rou became the leader of quality standardization in many domestic catering enterprises.
Regarding the future of Nanmen Shuan rou, Malone said that after the team has rich international management experience, he will accept the invitation of international friends and expand abroad.
