Dongpo meat is also called rolled meat and braised pork. It is a traditional famous dish of Han nationality in Jiangnan area, belonging to Zhejiang cuisine and Sichuan cuisine, with pork as the main ingredient. Since then, "back meat" has spread all over Xuzhou and become a traditional dish in Xuzhou. Dongpo meat history and culture
Su Dongpo, a writer in the Song Dynasty, traveled all over the world and came to a place called Aicheng in Yongxiu. In dog days, Su Dongpo saved a child suffering from heatstroke. As a farmer's parents, I bought two Jin of pork, tied it with a pile of straw, and took it back to ask Mr. Su about his taste. It happened that Su Dongpo was writing poems and lyrics, and he was reading: "Harmony-Grass-Truth-Bamboo-Head and Heart ……". Hearing this, the farmer thought it over carefully. He thought it was to let him cook the meat with straw and cook it thoroughly.
At dinner time, the food was served. Su Dongpo saw a whole piece of meat, not cut, tied with straw. For some reason, he was embarrassed to speak. The farmer was quite surprised, so he said to Su Dongpo, "I went to ask you this morning. Didn't you say that' cooking with grass smells good'? I did what you wanted. Why don't you eat it, sir? " Su Dongpo suddenly realized that he was going downhill. I didn't expect the pork to be mixed with straw, which was delicious.
After supper, the farmer and his wife went out. Dongpo thought: I'm very sorry for the host's kindness, which has disturbed me for several days. After several trips, the host refused, otherwise I'd better go today. This idea is affirmative. Su Dongpo took five taels of silver out of the bag and put it on the table, leaving a note that read: "The host refused warmly, and Dongpo left without saying goodbye." When the farmer and his wife came back, they were surprised to see this note. It turned out that the benefactor who saved their children was the famous Mr. Su Dongpo.
The story spread from one story to another, and everyone learned to use straw to tie meat for cook the meat to eat. It's really crispy and delicious. The villagers call this kind of meat "Dongpo Meat". Because of its delicious taste and unique practice, it has been passed down to this day.
